1. Chemical monitoring of baru (dipteryx alata vog.) pulp fermented beverage
Abstract Considering that the consumption of baru is not yet fully diffused among humans, it is possible to perceive the need for its greater use, mainly because it is a natural source of sugars, essential raw material for the production of various products, such as beverages fermented. In view of the above, the objective of this work was to develop fermente

2. Cachaça Production in Brazil and its Main Contaminant (Ethyl Carbamate)
ABSTRACT This review aims to demonstrate the possible formation of Ethyl carbamate (EC) in different production stages of cachaça. EC is a carcinogen confirmed in animal experiments and possibly carcinogenic to humans. EC incidence below relevant health limits naturally affects many fermented foods and beverages. Concentrations above 1 mg L–1 are often de

3. Effect of alcoholic beverages on progeny and reproduction of mice
ABSTRACT Alcohol is the most commonly consumed substance in the world. The objective of this study was to evaluate the influence of alcoholic beverages on male reproduction and possible alterations in their offspring. The mice were divided into 4 groups: beer, wine, cachaça (a type of sugarcane rum), with ethanol concentrations of 1.9 g/kg, and control grou

4. Elaboration and characterization of Japanese Raisin Tree (Hovenia dulcis Thumb.) pseudofruits fermented alcoholic beverage
Abstract Hovenia dulcis pseudofruits have underexplored properties for food purposes, despite their pleasant sensory characteristics and therapeutic benefits. The aim of this study was the elaboration and chemical characterization of the alcoholic fermented beverage of H. dulcis, using selected strain of Saccharomyces cerevisiae (CCMA 0200). The resulting fe

5. Whole genome sequence of lactic acid bacterium Pediococcus acidilactici strain S1
Abstract Pediococcus acidilactici strain S1, a lactic acid-fermenting bacterium, was isolated from makgeolli-a Korean traditional fermented alcoholic beverage. Here we report the 1,980,172 bp (G + C content, 42%) genome sequence of Pediococcus acidilactici strain S1 with 1,525 protein-coding sequences (CDS), of which 47% could be assigned to recognized funct

6. Assessment of volatile organic compounds from banana Terra subjected to different alcoholic fermentation processes
Abstract Banana characteristics could provide yeast growth and support the action of yeast to produce beverages. The effects of enzymatic treatment, centrifugation, commercial yeast and two selected strains of Saccharomyces cerevisiae were investigated using the fermented banana Terra. Volatile organic compounds (VOCs) were determined by solid phase microext

7. Vinegar rice (Oryza sativa L.) produced by a submerged fermentation process from alcoholic fermented rice
Considering the limited availability of technology for the production of rice vinegar and also due to the potential consumer product market, this study aimed to use alcoholic fermented rice (rice wine (Oryza sativa L.)) for vinegar production. An alcoholic solution with 6.28% (w/v) ethanol was oxidized by a submerged fermentation process to produce vinegar.

8. Study of the aging of fermented of yacon (Smallanthus sonchifolius) and sensory profile and acceptance
Yacon is considered a functional food due to its the fructooligosaccharide (FOS) content, however its perishability and low production volume is a problem. The aim of this study was to analyze the changes in aging during one year of storage and conduct sensory analysis of fermented of yacon. For one year total acidity, volatile acidity, free and total sulfur

The aim of this study was to evaluate the chemical composition of sugar cane spirits, fermented by different commercial Saccharomyces cerevisiae yeast strains and double distilled by pot still. Sugar cane juices were separately fermented by yeasts CA-11, Y-904, BG-1, PE-2, SA-1 and CAT-1 and distilled by pot still according to the methodology used for whisky

11. Produção de bioetanol a partir de resíduos agroindustriais
Concerns about global warming and the depletion of petroleum cause the search for alternative fuels from renewable sources. The current study aims at obtaining bioethanol from fermentable sugars extracted from hydrolyzed residues in situ by solid-state fermentation (SSF). The first stage was the SSF for the hydrolysis of the culture medium which is composed

12. Action of ultraviolet radiation on the reduction of microbiota from cachaça-producing sugarcane / Ação da radiação ultravioleta na redução da microbiota do caldo de cana para produção de cachaça
The fermentation process for the production of cachaça (the most popular alcoholic distilled beverage) in Brazil is influenced by the quality of the raw material. Thus any raw material containing a high microbial load results in an ineffective fermentation, which is reflected on the final quality of the cachaça. This study evaluated the action of ultraviol
