1. Abordagem microbiológica da fermentação oxidativa, alcoólica e malolática no processamento da sidra
In the Europe the fermentation process of apple juice for cider obtention comprehend 3 phases distinct, oxidative and alcoholic fermentation phase (synthesis of aromas and ethanol release respectively) and the malolatic phase (reduction of the acid). In the Brazil the process occurs in temperatures of 25-35C, presence of sulfite and with addition of yeast, r

2. MULTIPLE SCARS, A NEW TYPE OF YEAST SCAR IN APICULATE YEASTS
Streiblová, Eva (Czechoslovak Academy of Sciences, Prague, Czechoslovakia), K. Beran, and V. Pokorný. Multiple scars, a new type of yeast scar in apiculate yeasts. J. Bacteriol. 88:1104–1111. 1964.—A new type of yeast scar is described in apiculate yeasts: Saccharomycodes, Nadsonia, Hanseniaspora, and Kloeckera. These scars are formed on the distal pol

3. Mannose-containing Polysaccharides of the Apiculate Yeasts Nadsonia, Hanseniaspora, Kloeckera, and Saccharomycodes, and Their Use as an Aid in Classification1
The mannose-containing polysaccharides formed by species of Nadsonia, Hanseniaspora, Kloeckera, and Saccharomycodes were extracted with hot aqueous alkali and purified by precipitation as their copper complexes. N. fulvescens and N. elongata formed galactomannans, while Hanseniaspora and Kloeckera species and S. ludwigii formed mannans. H. valbyensis, H. uva
