Avaliação da ingestão potencial dos antioxidantes butil hidroxianisol, butil hidroxitolueno e terc-butil hidroquinona

RESUMO

The potential intake of the phenofic antioxidants butylated hydroxyanisole (BHA), butylated hydroxytoluene (BHT) and tert-butyl hydroquinone (TBHQ) was estimated based on national food consumption data and on national maximum permitted additive levels. In a first step, the safety aspects of the maximum permitted levels of each antioxidant were assessed using the Budget Method. The results indicated the need of a more detailed intake study, mainly for BHA and BHT. Their Theoretical Maximum Oaily Intake (TMOI) was then estimated, resulting in values lower than the Acceptable Oaily Intake (AOI) recommended by JECFA for each compound. Based on the results and on tha fact that both the used methods tend to produce superestimates, it was concluded that the intake of the antioxidants BHA, BHT and TBHQ do not indicate any worry for mean Brazifian consumers. To confirm that the use levels of BHA, BHT and TBHQ are in accordance with the current legislation, some categories of food were selected for analysis. The analysed food were: soybean and com oil, hydrogenated vegetable fat, margarine, vegetable cream and halvarina, which were considered as the main exposure source to the three studied antioxidants through the diet. Samples of different brands and batches were colected in the main supermarkets of the city of Campinas, SP. The used analytical techique was high performance liquid chromatography (HPLC) with UV detection. The analytical results indicate that TBHQ and BHT are the most used phenolic antioxidants in vegetable oils and in fats and derived products, respectively. The antioxidant BHA was not detected in any of the analysed samples. According to the analytical data, the use of BHT and TBHQ is in fine with the current legislation, as the antioxidant levels were below their respective maximum permitted levels for 95% of the analysed samples. These results reinforce the conclusion of the intake study, when it was concluded that the intake of BHA, BHT and TBHQ in Brazil are in accordance with JECFA s recommendations and do not represent health risks to the population
