Conformação da qualidade microbiológica em couve minimamente processada no Distrito Federal : o caso da Agroindústria Machadinho

RESUMO

The trade of vegetable crops has changed substantially in the last years. Quality and presentation of the products are the most important facts in this change. Minimally processed vegetables are those that have been physically changed but have kept their fresh condition. The successive manipulation increases the chance of microbiological contamination of the products. The aim of this research was to evaluate the microbiological contamination by Salmonella sp. and fecal coliformes at 45C in two segments of the minimally processed Chinese kale to identify critical points. Samples of minimally processed Chinese kale were colected from Agroindústria Machadinho, Brazlândia-DF, and from supermarkets in Brasilia–DF. It was detected contamination by fecal coliformes at 45C in the samples from the supermarkets. It was observed the need of a higher integration between the agroindustry and the supermarkets. It is also necessary training of managers and staff, as well as the acquisition of equipments aiming quality maintenance in this supply chain.
