RESUMO

Actual data about rapid process for vinegar production (vinegar generator) is limited. It is expected the obtained results to contribute both to technological development and ampliation of vinegar use in Brazil, by the production of cheap and diverse types (tropical, fruits vinegar, e.g.) in order to satisfy consumers. This paper had the following objectives: 1. to develop a vinegar generator 2. to analyse this generator performance with some raw materiais: a) alcoholic solution added with minerals artificial medium for comparation b) wine obtained by alcoholic fermentation of orange and cashew nut. For the generator construction it was utilized glass cylinder sustained by nylon discs (there are three independent generators).
