RESUMO

Maise is considered a poor source of proteins for mammals during growth, in view of its relatively low levels of some essential amino acids in the endosperm, such as lysine. Thus, the discovery that the opaque-2 mutant gene nutritional value of maize has stimulated research improves the into the mechanism underlying this alteration, together with the selection of mutants with improved nutritional qualities. In this study, the enzyme lysine a-ketoglutarate redutase (LKR), which transform lysine in saccharopine, was characterized. Apparently, this is the first step of ly sine catabolism in the maize endosperm. Two lines of maize, with their normal and opaque-2 versions, were used in this study. Both seedlings and immature endosperms were studied, the latter in particular during development (lO-52DAP). The extracts for enzyme assay.
