RESUMO

This research considered the optimization of the technological parameters involved in the process of reduction of butteroil cholesterol content. It was based on the formation of agregates of cholesterol with miceles of saponins of Quilaia saponaria in aqueous solution, followed by an adsorption step of the complex formed, in diatomaceous earth. Anhydrous butteroil containing 2,5 mg cholesterol / g oil was in contact with various quilaia aqueous solutions at controlled temperature for one hour in a orbital water bath shaker. Celite 545 was then added and the agitation maintained for one more hour. The phases were separated by decantation and the cholesterol depletion in the oil phase was monitored through gas chromatography analysis. Experimental planning evaluated the influence of four process variables. The Contact Temperature and the Amount of Diatomaceous Earth were found to have no significant influence on the process output, while the Quilaia Solution Concentration (QSC) and its pH did influence it. Increasing QSC promoted higher cholesterol extration, and the opposite was observed with the solution pH: lower values produced a higher removal index.
