Sensibilidade ao sabor amargo e sua influencia sobre consumo e freqüência alimentares em idosas

RESUMO

Objective: To evaluate the capacity to perceive bitter taste in a sample of the elderly population of the Brazilian Federal District, and to investigate its association with the consumption profile of distinct alimentary groups. Materials and Methods: cross-sectional with a convenience sample constituted by 255 individuals aged 60 years or older, female participants of the Elderly Health Promotion Project. The following data was obtained: alimentary frequency by clinical dietitians, determination of the TAS2r38 alleles, visual and hearing acuity; sensitivity tests to PTC phenylthiocarbamide), sodium benzoate and thioureia. Results: Non parametric tests of the data confirmed the remarkable effect of the C allele in determining sensitivity to PTC (p <0.001). Carriers of the C allele displayed diminished consumption of type B vegetables as well as of some vegetables generally recognized as bitter: arugula (p = 0,044) e chard (p = 0.006). Similar associations have not been observed with other food classes. Conclusion: This work suggests that genetic variations concerning sensitivity to PTC modestly determine alimentary consumption of Brazilian older adults. Nonetheless, our results do not eliminate the hypothesis based on which sensorial experiences and/or psychological, cultural as well as socioeconomical factors may exert influence on alimentary choices in elderly individuals
